Ingredients: for 1 batch (aprox. 20 muffins) 1 cup yogurt (150 - 175 g), 2 cups of sugar, 1 cup of oil, 1 package vanilla sugar, 3 eggs, 3 cups of flour, 1/2 - 1 package backing powder, a little milk if necessary (as a measuring cup you use the yogurt cup), chocolate chips, cherries, and any other filling that you like - dried fruit, cinnamon, etc.
Preparation time: (for 2 batches) 40-60 minutes.
Difficulty: very low
Method
To begin with preheat the oven at a lower temperature 150 - 175 Centigrades. Mix together the yogurt, oil, sugar and vanilla sugar.
Add the eggs and mix, then add the flour and the backing powder. If you think the dough is too hard, add a little milk (I didn't). If you want to add chocolate chips or other fillings, now is the time. I usually add 100 g of chocolate, 200 g if I bake a double batch.
Prepare the muffin tray - put muffin paper cups in it. Put dough in each paper cup so as to fill 3/4 or 2/3 of it - the muffins will grow in the oven. You can use a normal tablespoon, a decorating bag or, as I do, an ice cream scoop. Bake the muffins for approximately 30 minutes at 150 Centigrades.
Use a toothpick or a wooden skewer to see if the muffins are baked - if it comes out clean and it is not sticky, the muffins are ready.
